Dear William, Eric, and Jennifer –We stopped by the truck last night and sampled your fried catfish. My name’s Larry, and I’m from Natchez, MS, went to LSU, was stationed in Biloxi, and spent lots of time in N.O. When I was a kid, my dad was stationed at Camp Shelby. So, I’ve caught, cooked, and eaten about ten tons of catfish in restaurants. And my opinion is: you guys serve the best there is. The fish is sweet, firm, and moist, the breading is amazing—and the sauces are perfect.
We’ve decided we MUST have more, even though we live in faraway Douglas County, where it’s hard to get anything to eat. We’ll BE BACK!
PS: William is the only person I’ve met in years who knows where Adams County, MS, is!!
